Why do these units cost so much less than the other gelato cases you see out there? Answer: The super expensive Italian models, with the big windows, have what is called "forced air refrigeration". This is important if you plan on "scuplting" your gelato and putting little ribbons in it, etc. Also important if you're building a $200K plus gelateria.
If you're like most people, you simply want to add gelato to your business, without spending $15k plus. You want to sell gelato and make a profit. You want a quick payback on your freezer investment. If this sounds like you, then this is the gelato case you want. If you buy the gelato from a supplier, they will deliver it in 5 liter plastic pan liners, with lids on it. This is mounded gelato, and it is the easiest way to break into the business. The gelato is in the 5 liter pan liner, and when you receive, you simply remove the cover, drop the pan liner in the 5 liter pan and scoop away. To clarify, you should have actual 5 liter metal pans in the racking first to give the liner a strong foundation to be dropped into. Remember that we don't include these metal 5 liter pans, they must be purchased from a gelato supply or restaurant supply store.
The SP models have "cold wall" refrigeration which works just fine for mounded gelato. You get racking for 5 liter gelato pans, which are the industry standard.
